Tonight I practiced my hand at (somewhat healthy) vegetarian cooking. This is the recipe I put together based on the most delicious looking things we had in the fridge / pantry.
Roasted Kale & Stuff
Tiny OnionsMedjool dates (chopped)
Preheat oven to 400. Coat kale, dates, and onions in olive oil. Sprinkle with salt & pepper. Roast for 12 minutes. Toss again & chop into smaller pieces. Top with freshly grated parmesan cheese.
