In my opinion, food is the most exciting part of the superbowl. Followed closely by funny ads (surprisingly few of these this year) and seeing friends who do like football get excited for their team (not-surprisingly TONS of these this year, go hawks). These aren't some of my most elegant culinary concoctions, but they were darn tasty. And festive.


Peanut Butter Chocolate Cupcakes
(Adapted from Glorious Treats)

2 cups sugar
1 3/4 cups all purpose flour
3/4 cup unsweetened cocoa
1 1/2 teaspoons baking powder
1 1/2 teaspoons baking soda
1 teaspoon salt
3 eggs
1 cup whole milk
1/2 cup vegetable oil
2 teaspoons vanilla extract
1 cup boiling water

Preheat oven to 350F. Mix sugar, flour, cocoa, baking powder, baking soda and salt. Add eggs, milk, oil and vanilla. Beat on medium speed for one minute. Stir in boiling water (thin batter is expected). Bake cupcakes for 20 minutes.

1/2 cup butter
1 cup smooth peanut butter
8 oz. cream cheese
4 cups powdered sugar
1 tablespoon whole milk

Beat the butter until smooth. Add cream cheese, beat until combined. Add peanut butter, beat until combined. Slowly add powdered sugar and continue to mix until smooth. Add in cream, beat for 30 seconds.


Pretzel Tots
(Adapted from A Cozy Kitchen)

1 1/2 cups warm water
1 tablespoon sugar
1 1/2 teaspoons kosher salt
1 package active dry yeast
4 1/2 cups all-purpose flour
2 ounces melted butter
Vegetable oil, for pan
10 cups water
2/3 cup baking soda
1 large egg yolk beaten with 1 tablespoon water
Pretzel salt or coarse Sea Salt

Combine water, sugar and kosher salt in kitchen-aid bowl and sprinkle the yeast on top. Let sit for 5 minutes. Add flour and butter, mix on low speed w/ dough hook until combined. Mix on medium speed until the pulls away from the side of the bowl. Place dough in oiled, covered bowl for 1 hour. Preheat oven to 450F. Bring water and baking soda to a rolling boil. Divide dough into 4 pieces. Roll each into a 1 inch rope and cut into 1-inch pieces. Roll into small "tots" and place each into boiling water for 30 seconds. Place on baking sheet and brush with egg yolk / water mixture. Sprinkle with salt. Bake 12 minutes.
